Near the varaison the clusters were thinned so that the vines developed their full potential with a suitable yielding. The harvest was hand-made, and only perfect state clusters were picked, plot by plot according to the optimal state of maturity, in order to obtain the maximum quality. The grapes were transported to the cellar in the shortest time possible, in small boxes which contain 15 Kg (33 pounds) of them.
Once in the cellar, they were pressed, and temperature-controlled stainless steel tanks were filled. Fermentation was performed at 20º C (68º F), with periodical risings twice a day during the 4 or 5 days that maceration took. Then, the wine was devatted and allowed to end its alcoholic fermentation.
The monolactic fermentation took place in the same stainless steel tanks used before, allowing for the own wine bacteria to perform it in a natural way.
Aging is carried out in French and American oak barrels for twelve months. Later, after bottling, it has remained in natural caves with constant temperature and humidity, 16ºc of average, another twelve months.
Cherry colour with Garnet rim. The aromas are ripe fruit, spicy, complex, mineral, with hints of toasting barrels. On the palate powerful tannins and slightly astringent.
